Hello everyone! Today on another episode of breakfast recipes, I will be showing you how to make potato pancakes.
These delicious pancakes are on my list of favorite potato recipes; number one on that list is potato omelette, which I shared few weeks ago. This recipe is very easy and it’s not deep fried, which makes it a bit healthier than the ones sold in some restaurants. So, let’s make some potato pancakes!
- 2 large potatoes
- 1/2 onions
- 1 tbsp flour
- Large egg
- Salt and pepper to taste
Peel back of potatoes and onions, and wash.
Grate potatoes and onions together (you can use a food processor instead of a grater).
Pour everything into a strainer with a bowl underneath to gather excess liquid, this is important because what we want is a thick batter. Let it stay for about five minutes.
Pour the liquid away, you’ll notice some starch at the bottom of the bowl, add your thick potatoes to that starch and mix together
Add egg, flour and salt. Stir, your batter should be thick. If it’s watery, you have to take it back to the strainer because a watery mixture will spread too much in the pan when fried
Preheat frying pan (non stick) and add about 1 teaspoon of oil to pan, gently add potato mix. Let one side fry for about 5 minutes and flip to the other side.
When both sides, including the inside are fried and well cooked, drain on paper towel. There will hardly be any oil on the towel since oil used for frying is very little.
Serve hot, enjoy!
